The ideal way to turn your carrots into something warm and comforting. Not only is it healthy and delicious; it's easy to make, will be ready in under an hour and can be stored in the refrigerator for 3 days.
Ingredients

500 gcarrots (peeled and sliced into chunks)
250 gfloury potatoes (e.g. russet, maris piper cut into chunks)
1 mediumonion (roughly chopped)
1 tspcumin
1 ¼ ltrvegetable stock
1 tbspvegetable oil
1 tbspbutter (or 1 extra tbsp of vegetable oil)
to tastesalt (optional)
to tastepepper (optional)
