Simple Hong Kong Style Fried Noodles

This super simple noodle recipe is a great side for Chinese dishes, or could even serve as a light meal in its own right.

Ingredients

200 gmedium egg noodles
150 gbean sprouts
2pak choi / bok choy (roughly chopped)
1 ½ tspdark soy sauce
1 tspsesame oil
3spring onions / scallions (cut into strips)

Method

1.

Place the noodles in boiling water for 4 minutes until they are soft, remove from the water and spread out on a clean tea towel/dish towel to cool.

Drying the noodles out on a tea towel helps to stop them sticking to the wok

Heat the vegetable oil in a wok until just starting to smoke, then add the pak choi and cook for a minute.

Once softened, push the pak choi to the back of your wok, add the soy sauce and sesame oil and add the noodles and bean sprouts.

4.

With a spatular, push the noodles from the centre out to the edges in a circular motion, coating in the sauce, until softened and cooked through.

5.

Mix everything together, and serve with the spring onions/scallions over the top, and a little more soy sauce if desired.
