The modern UK pub classic; chicken breast, wrapped in bacon then smothered with barbecue sauce and cheddar cheese.
Heat the oven to 180C/350F and wrap each chicken breast in 2-3 rashers of bacon so they are completely covered, place in an oven proof dish and bake in the oven for 25 minutes.
Note: Wrapping the chicken in bacon helps make sure the chicken doesn't dry out
Remove the chicken from the oven and coat each piece in a thick layer of barbecue sauce, then pile on the grated cheese - to get the cheese to fully cover the breast you will really want a good handful, so don't skimp on the cheese! - then return to the oven for a further 10 minutes until the cheese is melted and the chicken is cooked through - it should reach an internal temperature of 74C / 165F on a meat thermometer.
Spoon over a little of the cheesy bbq sauce from the oven dish, sprinkle with finely chopped flat leaf parsley and serve with a little more barbecue sauce, a side of fries and a fresh salad.
