
Pub Style Hunter's Chicken

The modern UK pub classic; chicken breast, wrapped in bacon then smothered with barbecue sauce and cheddar cheese.

Heat the oven to 180C/350F and wrap each chicken breast in 2-3 rashers of bacon so they are completely covered, place in an oven proof dish and bake in the oven for 25 minutes.
Note: Wrapping the chicken in bacon helps make sure the chicken doesn't dry out
Remove the chicken from the oven and coat each piece in a thick layer of barbecue sauce, then pile on the grated cheese - to get the cheese to fully cover the breast you will really want a good handful, so don't skimp on the cheese! - then return to the oven for a further 10 minutes until the cheese is melted and the chicken is cooked through - it should reach an internal temperature of 74C / 165F on a meat thermometer.
Meanwhile, slice the mushrooms (if using) season with salt and pepper and fry in a little butter until golden.
Add the mushrooms on top of each chicken breast (optional) and a sprinkle with finely chopped flat leaf parsley. Serve with a little more barbecue sauce and a side of your choice.

What type of bacon should I use for Hunter's Chicken?
For this it doesn't really matter, I used UK back bacon, which is an uncooked variety cut from cured pork belly and may not be readily available in the US, however streaky bacon also works well. You could even go a little more fancy and use parma ham. When using larger cuts of bacon you won't need as many rashers to wrap the chicken.
What sides go with Hunter's Chicken?
I like thick cut fries, potato wedges or sautéed potatoes, but mashed potato also works well. You can also make a simple side salad to freshen the dish up a little.
