Making your own barbecue sauce is easier than you think and will last in the fridge for up to 2 weeks.

Ingredients

250 mlketchup
1 smallonion (finely chopped)
2 clovegarlic
50 gsoft brown sugar
50 mlcider vinegar
1 tbspWorcestershire sauce
1 tspsmoked paprika
to tasteblack pepper
to tastesalt
1 tbspolive oil (or vegetable oil)

Method

1.

Heat a little olive oil in a pan and fry the onions for 5-7 minutes over a medium heat until softened, then crush in the garlic and cook for a further minutes until fragrant.

Add the cider vinegar, ketchup, brown sugar, Worcestershire sauce, smoked paprika and season with a little salt and pepper.

Bring the mixture to a simmer, then reduce the heat and cook for 15-20 minutes until thickened. Taste to adjust the seasoning.

You can also adjust the vinegar and Worcestershire sauce here to get the perfect balance. If you want it a little sweeter try adding a little honey or maple syrup

To create a smooth sauce, blitz with an immersion blender or allow to cool a little and use a stand blender or mini food processor.

Allow the sauce to cool before using. You can store the sauce in an airtight container in the refrigerator for up to 2 weeks.

Storage

Refrigerate in an airtight container for up to two weeks.
